Is there any temperature sensor that would give us a rough idea of the intake valve temp? I would like to see if I am achieving a high enough temperature to prevent / burn off carbon deposits. Ideally need to bring it up above 320 deg C to achieve this right?

With an OBD scanner, I can see three intake sensors, but i don't think they are deep enough in the intake. The highest of the three only gets to about 60deg max.

Do any of the exhaust sensors give an indication?

There are no carbon deposits, unless you have a diesel. And no, theres no way short of pulling the intake manifold off and hitting it with a laser. Just run it to red line a few times on a nice deserted highway.
